How to Calculate Bread Ingredients

Formula

Flour = Total Weight ÷ (1 + 0.65 + 0.02 + 0.01);
Water = Flour × 65%;
Salt = Flour × 2%;
Yeast = Flour × 1%

Baker's percentages express each ingredient as a percentage of flour weight: 100% flour, 65% water, 2% salt, 1% yeast is a standard bread formula.

This calculator divides the total dough weight by the sum of all percentages to determine the flour weight, then calculates everything else from there.
