Formula

Flour = Total dough weight ÷ (1 + hydration% + salt% + yeast%); other ingredients = Flour × their %

Different bread types have different hydration levels: white bread uses 60-65%, whole wheat 68-72%, and rye 75-80%. Higher hydration creates a more open crumb.

Baker's percentages make it easy to scale from one loaf to ten while maintaining the same proportions.
